Rinsing Your Produce Won't Save You From These Pesticides — Here's What Will

The Rinse Ritual Isn't Doing What You Think

Most of us do it without thinking. Strawberries go under the tap. Apples get a quick rub on a shirt. Spinach gets a bowl rinse. It feels like due diligence — a small, sensible habit that puts a little distance between us and whatever was sprayed on the farm.

But here's the uncomfortable truth: for a specific and increasingly common class of pesticides, that ritual is almost entirely symbolic. Not because you're rinsing wrong. Because the chemicals were never on the surface to begin with.

They're inside the plant. In the cells. In the juice. In every leaf and fiber. And no amount of water, scrubbing, or peeling is going to change that.

What Makes Systemic Pesticides Different

Conventional pesticides — the kind most people imagine — sit on the outside of produce. They're contact-based, designed to kill insects that land on or bite into a crop. A good rinse, or even just time and rain, can reduce your exposure to those.

Systemic pesticides work on an entirely different logic. They're applied to seeds before planting, worked into the soil, or sprayed on plants in a way that allows the chemical to be drawn up through the root system and distributed throughout the entire plant — leaves, stems, fruit, everything. The goal is to make the plant itself toxic to pests. When a bug bites in, it ingests the pesticide and dies.

The most widely used class of systemic pesticides in the US right now are neonicotinoids — commonly called "neonics." You may have seen them in headlines about bee die-offs, because they're devastating to pollinators. But they're also showing up in the food on your plate in ways that a kitchen rinse simply cannot address.

Other systemic chemicals include certain fungicides and herbicides that are taken up through soil and root absorption. Glyphosate — the active ingredient in Roundup — behaves systemically in plants engineered to tolerate it, meaning it can be present throughout the tissue of crops like soy, corn, and some oats.

Which Produce Is Most Affected

Not every fruit or vegetable carries the same risk. The Environmental Working Group's annual reports are a useful starting point, but they don't always distinguish between surface residue and systemic contamination — a meaningful difference.

Produces grown from treated seeds or in treated soil tend to carry the highest systemic load. That includes:

Peeling helps with contact residues on thick-skinned produce. But for systemic chemicals, the flesh itself is the problem. Peeling a peach doesn't meaningfully reduce your exposure to a pesticide that was distributed through the fruit's vascular system weeks before harvest.

Why This Matters for Your Health

The science here is still evolving, and that's part of what makes this so frustrating to navigate. Regulatory agencies like the EPA set tolerance levels — the amount of residue considered legally acceptable in food — but those standards are often based on individual chemicals, not the cocktail effect of multiple residues consumed over a lifetime.

Emerging research has raised concerns about neonicotinoid exposure and neurological development in children, endocrine disruption, and immune function. Studies on glyphosate have linked chronic low-level exposure to gut microbiome disruption, which is particularly concerning given how central gut health is to everything from immunity to mood.

None of this means you should panic. But it does mean the "just wash your produce" advice is an incomplete answer to a more complicated problem.

What Actually Helps

So if rinsing isn't enough, what is? The good news is that you have more options than just buying everything organic — though that remains the most effective single strategy for systemic pesticide reduction.

Buy organic strategically. You don't have to go all-in at once. Prioritize organic for the highest-risk items: strawberries, spinach, peaches, apples, and oats. For produce with thick skins that you don't eat — avocados, onions, pineapple — conventional is a much lower concern.

Fermentation changes the equation. This one surprises people. Certain fermentation processes — particularly lacto-fermentation — have been shown in preliminary research to degrade some pesticide residues, including certain neonicotinoids and organophosphates. Fermented vegetables like sauerkraut and kimchi made from conventionally grown cabbage may actually carry lower residue levels than fresh conventional cabbage. It's not a magic eraser, but it's a meaningful bonus from a practice that's already great for your gut.

Cook your greens. Blanching or sautéing leafy greens can reduce some pesticide residues — particularly those that are heat-sensitive or water-soluble. It won't eliminate systemic chemicals entirely, but studies have shown measurable reductions in residue levels after cooking compared to raw consumption. Another reason your wilted spinach isn't just a texture preference.

Diversify your diet. Eating a wide variety of produce means you're not accumulating heavy exposure from any single source. Rotating your greens, your fruits, your grains — it's good nutritional advice that also quietly reduces pesticide load from any one crop.

Know your farmers. If you shop at a farmers market, ask. Many small farms use minimal or no pesticides but can't afford USDA organic certification. A direct conversation with the person who grew your food can tell you more than any label.

Soak in baking soda solution. For surface residues — and as a complement to other strategies — a ten-minute soak in a baking soda and water solution (about one teaspoon per two cups of water) has been shown to outperform plain water for removing contact pesticides. It won't touch systemic chemicals, but it handles what it can.

The Bigger Picture

The real issue isn't that consumers are rinsing wrong. It's that the burden of managing pesticide exposure has been quietly shifted onto individuals, when the more meaningful change would happen upstream — in farm policy, in what seeds are permitted, in how our food system is subsidized.

Supporting organic and regenerative farms, even imperfectly and on a budget, is a vote for a different kind of agriculture. It's not just about your personal health. It's about what we're asking the land, the water, and the pollinators to absorb on our behalf.

In the meantime, shop smart. Ferment when you can. Cook your greens. And stop feeling guilty that your rinse isn't working — it was never designed for this problem.
